Cauliflower is one of the most versatile vegetables in the world! Steam it, bake it, broil it, boil it, blend it, mash it, or eat it raw! The possibilities are endless! Best of all it has barely any flavor except a slightly sweet mild earthiness. Blended with a tiny amount of broth and this puree reminds me of mashed potatoes. So mild and easy on the stomach, but filled with fiber and vitamins!
This puree is so easy to put together it is sure to be a new staple.
Cauliflower Zucchini Puree

Ingredients
- 3 large Organic Zucchini
- 1 large Head of Cauliflower
- 1 tbsp Butter or Earth balance optional
Step 1
Wash your veggies well.
Step 2
Chop the cauliflower into chunks and add in metal colander. Place the colander in a large pan with a tight fitting lid. Add 2 cups of water and set on a larger burner on high.
Step 3
Cut the zucchini into rounds and add to the colander as well. We want to give the cauliflower a 5 minute head start.
Step 4
Carefully remove the colander from the pan and add the contents to the food processor.
Step 5
Blend until smooth and transfer to your Twist bags using the simple Foodii system. Enjoy!
